 Post subject: Veggie Noodle Extravaganza!

I've been on a mission to use my new mandoline slicer as much as possible!

Yellow Squash with chickpeas, tomatoes, nooch, red pepper flakes, garlic, and coconut oil. I did this same dish with zucchini too. Great both ways.

Zucchini Pasta with tempeh, spicy marinara, nooch and fresh basil.

Raw Carrot Slaw over a sweet potato. Dressing on slaw is peanut butter, coconut milk, ginger, cilantro, cayenne pepper, braggs, and peanuts.

Salad with arugula, tomatoes, carrots, beets, sunflower seeds, sea sprinkles, avocado, cucumber, and lemon.

I also made a dish with eggplant noodles that I didn't take a pic of. It was tasty but I hated the texture of eggplant noodles. Not a good idea, don't do it. And I made a casserole with zucchini noodles, a homemade tomato sauce, and loads of cashew ricotta. Forgot to take a pic of that before we devoured it.

Those all look awesome!! My mom has a mandolin slicer and I didn't know it could be used for noodles! I'm totally going to borrow it.

You just have to set it to the julienne setting and shred away! I picked up an unused one at a yard sale. It's not the greatest on the market and the guard is bulky so I wind up just using my hands to guide the veggies over the blades. Just have to be super careful not to slice your knuckles off! You can also just use a vegetable peeler to get ribbon sized noodles which is what I did with the zucchini marinara dish.

that carrot slaw is gorgeous!!
i have one of those standing zoodle slicers (i can't remember what the hell they're called, but they make a long continuous noodle or lots of long little continuous noodles) that i haven't used in a while, now is carrot season, maybe it's time to dust it off.

The eggplant dish is in the buzzfeed post too. But I wouldn't bother with it. And I veganized the deconstructed manicotti dish by ditching the mozzarella all together and just using cashew ricotta. It was good, but it all fell apart in the oven. I didn't do it in a cast iron skillet like that. Just assembled it in a glass 8x8 baking dish. Mind didn't look that pretty, but it was delicious.

And I also learned that chickpeas, garlic, and red pepper flakes cooked in coconut oil is the greatest base for any dish ever! It's magical. The chickpeas get really soft and creamy.

And if you cross cut your veggies in the opposite direction and use the julienne blades, you get chopped veggies! I love my mandolin but don't use it often enough.

Just cut your potato (whatever) across, not quite going all the way through, and then turn the cuts to run perpendicular to the julienne blades on the mandolin. Because you've already done the cuts in one direction you get small pieces instead of ribbons. I'm probably. To explaining it well, sorry.

It's not super elegant but made really fast work of my leek and bean cassoulet one time. I should do that again.

That all looks lovely! My Mum got me a mandoline and I've been too scared to use it because I'm so clumsy and cut/burn myself in the kitchen all the time. But now I might have to.
