Yellow Squash with chickpeas, tomatoes, nooch, red pepper flakes, garlic, and coconut oil. I did this same dish with zucchini too. Great both ways.
Zucchini Pasta with tempeh, spicy marinara, nooch and fresh basil.
Raw Carrot Slaw over a sweet potato. Dressing on slaw is peanut butter, coconut milk, ginger, cilantro, cayenne pepper, braggs, and peanuts.
Salad with arugula, tomatoes, carrots, beets, sunflower seeds, sea sprinkles, avocado, cucumber, and lemon.
I also made a dish with eggplant noodles that I didn't take a pic of. It was tasty but I hated the texture of eggplant noodles. Not a good idea, don't do it. And I made a casserole with zucchini noodles, a homemade tomato sauce, and loads of cashew ricotta. Forgot to take a pic of that before we devoured it.
