White Bean Boursin from The Ultimate Uncheese Cookbook. This was really tasty, but more of a white bean spread to me than a "cheese". I'd still make it again, though!

Beautiful! I like some of the recipes from that book, but I wouldn't call any of them cheese ... oh well.. they're still good!

Sorry to not have written sooner! Umeboshi past is tart and salty - I don't remember the recipe exactly (it's been a while since I made this), but maybe try a flavored vinegar or lemon juice? I'd start with a tiny bit and add more to taste. And you might need to also adjust the salt as well.

Hopefully that helps, or maybe someone else will have better suggestions!
