The pic on the left is before microwaving.. it looks just like cooked oatmeal, but the chickpea flour brings it together well..

Totally healthy .. and good for breakfast or a snack before working out! Adding 1.5 T of peanut butter would make it a 400 calorie mini meal.

recipe here:

Could you do this in a toaster oven? And I don't have any psyllium husk. Could I use flax seed instead or just some more chickpea flour? Because if you can do all the above, this would be a great breakfast for me.

I'm sure it would be even better in a toaster oven.. and flax or even more chickpea flour would work really well. Let me know if you do it.. I'm thinking about 20 minutes at 400 would be good time/temp

This may be my breakfast tommorrow. And do you ever read The Chocolate Covered Katie blog? She just did something similar.

As I'm usually running late for things, I require all of my breakfasts to be portable! Therefore, I must try this. I love coffee and toast with hummus, but it can't beat oatmeal when it's cold outside.

this sounds so good- i would do it in the oven- is yours still out of commission? i am so impressed that you are still baking without it!

No, my oven works fine.. I just try not to turn it on for small things.. It would definitely be better baked in an oven!
