I used the Vcon recipe for a singel pie crust but used olive oil instead of magarine to turn my vegan chickenstew into these mini pies. I baked them inside of mi muffin thin. The crust was enough for six mini pies.

I did. I fact I do always uses oil for this pastry dough, canola for sweet and olive for savoury.

I think, that they would freeze quiet well. I left a few inside of the fridge after I made them and reheated them in the microwave the next day. They were still great and this is what will happen if you freeze them, too.
