Question: For the hot pepper jelly recipe, at the end, it says to "water bath process for 10 minutes." What does that mean?

And, I made the jelly and it is freaking delicious! I didn't realize that making jelly is such a giant PITA, but the end result was worth it! I ate some already on crackers with earth balance. YUM.
