Here's everything I ate this week that's photogenic enough to post! I made an utter mess of some Vegan Brunch tofu omelets and nearly burnt down my kitchen, so I've currently got the remaining batter in muffin tins in the oven: I'm hoping I can salvage it into passable mini omelets. While I cross my fingers and hope for the best, here are some of the things I've successfully made:
This is a buckwheat/coconut flour waffle with chocolate coconut banana soft serve. Yum.
Salad with roasted beets, slow-roasted tomatoes, white beans, walnuts, a riff on vegan richa pepperjack, and Hampton Creek mayo with basil and chives. Given that this was just a mix the most affordable produce I could find, it wasn't too shabby:
Deliciously Ella hot chocolate with Vegan Cookies Invade Your Jar pignolis. I would have enjoyed this more if I hadn't let the hot chocolate boil over and make a burnt, sticky mess of my stove. Alas.
This is the pizza that I always order in, but the place that I like charges me $26 (forking NYC), so I decided to try my hand at making my own. It's daiya, moroccan olives, shittakes, and pickled cubanelles:
WHITE PIZZA! Miyoko alfredo, daiya, potatoes, rosemary. fork yeah!
Oat flour waffle with maple almond butter and jelly. Breakfast perfection.
