I think next time I make this I'm going to let the seitan cool entirely before I put on the puff pastry. I think it will be more puffy that way. The heat from the seitan makes all the fat pockets in the dough melt.

I stole the idea for the artichoke salad from muffin-tuffin on the old boards. Mine has chopped artichoke hearts, garlic green onions, basil, vegenaise, and salt and pepper. I think muffin-tuffin does it with roasted red peppers and no green onions.
