Inspired by a recent trip to Midori's Floating World in Minneapolis, I've been making mochi nonstop. Never thought it'd be this easy! The flavor is good, but the best part (in my opinion) is the texture. I can't get enough of it.

The first is daifuku, with a homemade anko (red bean paste) filling in one, and a peanut butter + kinako (roasted soybean flour) in the other.

The second is a strawberry mochi with So Delicious vanilla cashew ice cream inside.

The third is a trifecta of strawberry, kinako and matcha. I made it to look like the dango emoji.

I used this recipe for all of them.

I haven't made mochi in years! Yours look so delicious. Way more creative combinations than I tried haha.

Oooh - I've never thought about trying to make mochi because I thought it would be complicated but your recipe looks pretty easy, so I may have to give it a go. And your results look gorgeous and delicious!

Amazing! One of the things I've been dreaming about making, but am reluctant to try.

Wow! Good job. I'm another one who loves mochi but never thought to make it myself. You are an inspiration!

Those look so perfect! It's been a few years since I made mochi, so now you've inspired me to make some! I even have a can of red bean paste that I bought in a more optimistic time.

So pretty!

I suggest also trying savory mochi: freshly grilled until puffy, dipped in soy sauce and wrapped in nori - it's my favorite.

So pretty! I love mochi, but the only time we tried to make it was a disaster.

Now I want to try again.
