They look amaaaazing. The only way I got these to work was to make peanut butter caramel, so I'm looking forward to reading your recipe.

Yeah, I've seen a lot of recipes that use peanut butter/dates/coconut/etc. And they just aren't caramel to me, tasty as a peanut butter chocolate shortbread square might be.

My husband took most of them to work and people are arguing with him about whether they are really vegan or not lol. The only non-vegan thing in the house is a box of cat biscuits and I certainly didn't use them :P

I need to make that. It looks so good! I love how thick the layer of caramel is in some of those; I recently bought a box of Lazy Day Millionaire's shortbread (which I try not to do too often because they're expensive and I end up eating most of them at once) and while they're delicious, there really could be more caramel in each.

They could also be way bigger. When I eat cake or biscuits, I want something huge and sweet and sickly, not something I can eat in one bite!
