Been thinking and writing a lot about cheap/frugal/budget eating and vegan food, which is something we've covered extensively on the forums to but its a subject near and dear to my heart since times are tough and food is required. I wrote a big old giant post about it on the blog (link below) on the trials and tribulations of being 1 (or 2) people trying to eat affordably without eating the same thing forever. I was inspired by last years mofo post from Vegan Sparklers on Tandoori Cauliflower lettuce wraps and I had been gifted a cauliflower so I made Tandoori Cauliflower for diner with the idea of making wraps the next day.

So I roasted up a head of cauliflower

Served it with cucumber cashew raita and tumeric brown rice and peas

Then used up some leftover lettuce and tomato for the wraps, I added hot sauce cause it wasn't spicy enough

Then because I like recycling leftovers and A won't eat vegetables or indian food (and I didn't really want to eat cauliflower forever) I turned it into a japanese style curry and served it over leftover rice topped with the cucumber raita.

After I was done enjoying my new curry I got to thinking about all the other things I could do with this one pot to stretch it out into more and more meals or staples for later in the month. More details on the blog.

Aaah, love it! It all looks delicious, and is very inspirational. Making initially cheap meals is no problem for me (vegan ingredients are pretty amazing that way), but I struggle with not wasting leftover elements.

That is the one thing I find myself falling back to moving out of my house full of veg*n flatmates... there is no one to pawn off leftovers to. So I have resorting back to transforming leftovers or freezing extra portions because I can only eat the same thing a few times and A won't eat 99.9% of food.
