 Post subject: A bit healthier Hedgehog slice :)

ca 1,5 packages of milk-and eggfree digestive biscuits, (ca 600 g)
ca 360 g apple sauce,
ca 3 dl almond flour,
ca 4 tbsp coconut oil,
1/2 tsp vanilla powder,

200 g milkfree chocolate,
100 g vegan margarine,
4 dl icing sugar
1/2 tsp vanilla powder
maybe 1-2 tbsp coconut oil.

Lay about 16 of the biscuits aside for the 3 layers. Ground the rest and add in the apple sauce, almond flour, coconut oil and vanilla powder. The dough should not be too runny, add some extra almond flour if needed.

Melt the chocolates in the microwave. Cream together margarine, icing sugar and vanilla powder. Add the melted chocolate, at first in small batches. You might need a bit of coconut oil to get it right, but the chocolate will harden in the freezer and fridge!

Put clingfilm in a breadform so that it extends well over the height and lenght of the form.

Layer in as follows:

1 layer biscuits - whole and broken - puzzle a bit like lasagna noodles ;)
1/3 of the biscuit-dough. Press gently to fill any spaces.
Put in the freezer for about 15 minutes.
Pour in half of the chocolate mix.
Layer in some whole and some broken biscuits again.
1/3 of the biscuit dough. Press gently to fill up.
Put in the freezer for about 15 minutes.
Pour over the rest of the chocolate mix.
The final layer of biscuits. Both whole and broken ones.
And the final 1/3 of the biscuit dough.

Fold over the clingfilm and press down gently.
Put it into the freezer for about 2-3 hours and after that keep the cake in the fridge till serving.

I think the german name is Kalter Hund / Kalte Schnauze and the like :)
Usually lots of saturated fat, dark chocolate and very sweet biscuits.

My version is a lot healthier I hope :)
