Omelet! I folded it up so you could peek inside. Daiya, spinach, tomatoes and mushrooms. Yummy!

Dal - my first attempt at a from scratch recipe! Because really, I can't go to the all I can eat Indian Buffet as much as I'd like to.

It is! That was her bowl - it had less broth so it photographed better.

And thanks! I try. I frequently miss the IDEA of eggs, which is funny, cause I was always so picky about them. But my dad made lots of omelets.

I find for some reason that the flax tempeh is less tempeh-y than the other ones so it works well here. Subtle tempeh flavor. :) I really want a reuben but I keep forgetting to buy sauerkraut!

your omelet looks soo good and your dahl looks great too. i love indian and i think making dahl is the most rewarding part. if you have leftovers, take them when they are firm from the fridge and fry them as balls or patties (sometimes i add leftover rice or a little chickpea flour to firm them up) and eat them with chutney for lunch the next day- its sooo good and easy.

thanks guys! i found it was a little thick so i added a tiny bit of water and then i let it cook a little longer than i felt i should have. my main cooking problem is impatience :)

You need Dakshin Vegetarian Cuisine From South India by Chandra Padmanabhan. You can cook your own Indian buffet every day.
I'm kind of freaked out by you having a non-Livi avatar. It's like, is it really still appifanie?
