My first time making a holiday meal for the whole family (4 people), convinced them to have it be vegan but had to work around many different taste preferences so I ended up with 3 different main courses and... not much else.
My brother made breakfast, chai muffins from VegWeb (recipe here
). They were a little bland but not bad.
Tossed salad with cranberry vinaigrette
Veganomicon lasagne: I subbed out the spinach for broccoli, and added black olives to the marinara sauce. My mom had said Dad wouldn't like it with spinach but my brother said there should've been spinach in it. Everyone loved it though. Just out of the oven:
Lasagne plated with haluski from Vegan on the Cheap
Farmers market tamales from Viva Vegan... my first time ever making tamales, and I never had them before... bad idea when there's so much other stuff going on in the kitchen and I realize last minute I have to improvise the steaming method.
There was 1 that turned out perfectly from the first batch I steamed (which was about 9). I'm just now cooking the rest, paying more attention to them so they aren't undercooked like most of these were.
Dessert: candy cane chocolate chip cookies from Vegan Cookie Connoisseur. I had made these for a potluck at for the Animals Sanctuary
last week, and my dad couldn't stop eating them so I decided to make them again. Turns out he only likes them fresh out of the oven. Oh well, more for me!
Finally, a bonus picture of spritz cookies I made for our Vegetarian Education Group's holiday vegan bake sale. Recipe from VCC, and I did 3 variations: chocolate dipped, peppermint, and anise.
