 These are seriously SCRUMPTIOUS. We make them all of the time. I adapted them from a (non-vegan) recipe I found on AllRecipes.com. They're basically a really yummy and slightly spicy bean mixture, sweet potatoes, tomatoes, and (vegan) sour cream! Mmmmm... If you'd like the recipe, I have it posted on my blog!:)

I'm thinking maybe I should do some sort of burrito theme for MoFo, because I love burritos and this and the burrito thread have me craving them. Bookmarked the recipe, it looks scrumptious!

I made them with vegan cheese once and they were just as wonderful, but was trying to save money this time and they honestly didn't need it.

I'll never forget when I realized this could be a thing (there's a taco place in my hometown that does a killer sweet potato burrito!). Yours sounds yummy!
