hmmph i see that ham looks very fresh;)
did u steam in foil or cloth..mom just sent me some cheese cloth and I want to see the difference
photo looks good but I can see it is fresh it tightens up in a day or so in the fridge
glad u tried the recipe
happy sandwich making:)

I used cheesecloth and yes, it is fresh. but there are plenty of leftovers to look forward to!

i knew it was yes to both questions like how the cheese cloth makes the surface smoother..i will test mine out later this week
yes i know how that ham looks when it is fresh

This is in the steamer RIGHT NOW!
Keep those fingers crossed. I made it into a 7"-ish snausage shape in cheesecloth and then a snug layer of foil, too.

I'll let you know how it goes.

that ham is amaaaaazing!

i forgot to put the tomato paste in my last batch (and doubled the tamari) and it reminded me of pork roll! (i hadn't had pork roll in over 15 years, and it brought back memories.)

one of these days i'm going to do a side-by side test of using angostura bitters and fee brothers bitters, and see what the difference is. (the pork roll discovery was when i used angostura, but i hadn't made it per the recipe with angostura. the first time i made it, i could only find fee bros., and it was slightly underflavorful. i think my tamari was also low-salt.)
