My blog is dusty, but the food coming out of my kitchen has been super yum!

Lentil Loaves (my mom is stuck in 197something and always asks me to make these for her) with smashed red potatoes and gravy, and some sauteed snap peas.

Finally got my hands on Daiya. I gotta say, It's stretchiness and gooeyness is AWESOME, but the flavor took some getting used to. I prefer the Mozz style on pizzas, but these enchiladas were so great after sitting in the 'fridge a few days! (mozzerella style inside, cheddar style on top, then black beans and red onions and homemade enchilada sauce from Vegan Comfort Food. served with roasted broccoli (not pictured), some spanish brown rice I threw together with leftover rice and a 'salad' of butter lettuce and a glob of Tofutti Sour Creme).

Isa's Red Lentil Thai Chili. Aw to the Yeah. words cannot describe the love (and so easy to make, makes a ton!)

Scramble Number One (clean out the 'fridge variety: tofu, onion, garlic, baby bellas, some canned tomatoes, salt, thyme, cumin, turmeric, nooch) and sweet potato biscuits (LOVE!) from AFR.

Scramble Number Two (holy crepe, there's nothing left in the 'fridge variety: tofu, onion, garlic, handful of frozen peas, salt, thyme, cumin, tumeric, nooch, fresh cilantro) so good!

and the best thing i've ever created/eaten, for serious! Just winged it when we wanted something 'Indian-esque'...made Socca batter and added coriander, cardamon, cumin, sea salt) then roasted potatoes and cauliflower and onions with various Indian inspired spices. threw some sauteed spinach in top with lots of garlic and oh. my. dog. dinner was awesome.

Where is the lentil Thai chili recipes from a book or somewhere else? It looks so good!

thanks! I didn't realize how comfort food friendly my kitchen is until this post! hehe.

that last dish seriously has me dreaming of a vegan food truck, happy vegans lined up for a mile. those pancakes are so amazing, crispy on the edges, light and fluffy in the middle, filled with yum. ok, now i want more.

One of the reasons I'll never likely write a cookbook is because I basically cook one of two ways. Either I follow a recipe almost exactly (unless previously doing so calls for tweaking) or I just wing it. Duplicating something I've made before and loved becomes more a lesson in muscle memory than anything else. the thought of having to measure specifically and stop to jot it down or recall a guessed measurement later is just so tedious to me. see? bad cookbook writing method. ;)

that said, the desire for a chickpea flour pancake came out of wanting a chickpea flour omelette and knowing that every one I'd ever tried produced sub par to failed results. So I googled 'chickpea flour pancake' assuming I'd just wrap up something yummy in it.
I found this

and instantly thought it needed more Indian flare, enter some shakes of cardamom, coriander, and turmeric.
I'd filled it with spinach and onions and garlic for breakfast.
Loved it so much that I made another batch, stuck in the 'fridge, and for dinner roasted potatoes in one pan, and cauliflower and onions in another, both just tossed with the same type of spices.
the spinach I just salt lots of garlic in heated olive oil, throw in chopped spinach and toss to coat, add a T or so of water, cover, lower heat and eat as soon as it's bright green and cooked thru.
not much of a recipe, but add your own favorite flavors and I don't think you can go wrong!
