I typed this up for a friend on Flickr a while back. Don't take the measurements too seriously. It's basically a tofu scramble with salsa soaked tortilla pieces in there. The taquerias I used to go to would just throw tortilla chips into scrambled eggs & serve salsa on the side.

1 tB vegetable oil
4 corn tortillas
1/2 cup red or green salsa
1 tB vegetable oil
1/2 an onion (diced)
1 serrano (minced) (seeded?)
2 garlic cloves (minced)
1 ts cumin
1/2 ts black pepper
1/2 ts salt
1/8 ts turmeric
1 lb tofu (smashed)

Add oil to the pan on med-high heat.
Cut tortillas into 1/4" strips & fry until crispy.
Set aside the tortilla strips in a bowl of salsa.
Add more oil to the pan & bring the heat back.
Saute the onion for a couple minutes.
Add the serrano & garlic for another minute.
Add the spices for a second.
Add the tofu, cook out the excess water & brown a little.
Toss the salsaed tortilla strips into the tofu.
