
OK, so it's not really carrot cake, but it sure tasted like it. I took my leftover Pumpkin Pie Oatmeal, added a tiny bit of chickpea flour, raisins, maple extract, stevia, more spices and topped it with Wholey Soy's plain unsweetened yogurt that was mixed with stevia, nutmeg and maple extract. Super good..
Microwaved for 4 minutes and cake was ready after a 10 minute rest.
