As part of Operation Use Up Stuff in Our Pantry Before We Move, I made the morning cereal bars (using a box of Cascadian Farm maple brown sugar granola, which I didn't love on its own). The cereal bars are currently cooling/firming, so I haven't tried them yet. I really hope I like them, since they contain a cup of maple syrup!

Wow, one cup of maple syrup? That's quite the commitment.
Last week I made the Nacho Cheese Dip. It calls for pb, which I thought was interesting, but it was pretty good.

Yeah, this cookbook calls for peanut butter in all sorts of recipes. It's in the fudge recipe, but so far as I can tell, the author intends it to just be a regular fudge, not a peanut butter-chocolate fudge.
The cereal bars are a bit of a dud. They are edible and taste okay (though super sweet), but they don't hold together at all. They've been in the fridge for 6 hours or so and they still fall apart if you try to pick one up. I'll eat them, but certainly won't make them again. Oh, and they call for peanut butter, too (also a cup).
I've looked through this cookbook some more and I'm not really impressed. The instructions rarely tell you what pan size to use, instead saying "baking pan", "casserole dish," etc. I noticed on the pad thai recipe, that there is a note that says to use tamarind paste (although the author calls it juice or pulp) for a more authentic pad thai, but it doesn't say how much to use or to use it in place of the lime juice that the recipe calls for. It seems like this cookbook is geared more towards beginner cooks or new vegans, but would lead to some frustrating results. I'm surprised at the positive Amazon reviews.
This is why I love being able to check out new cookbooks from the library!

I just got this from my library. It's got lots of pretty pictures and the famous nut based cheese recipes. Has anyone made anything you really liked out of here that I should try before returning?
