i made the hearty breakfast bowl this morning for my husband and i and as i was making it i was thinking it was a ridiculous amount of food for 2 servings. i definitely have a hearty appetite, in fact i tend to overeat.
in the end it ended up being a pretty good serving size (a big serving but not as ridiculously huge as i originally thought) OMG it was so delicious!! i ate all of mine and then my husband had a little bit leftover of the tofu and gravy and i ate some of that.
hearty indeed. i was never hungry again after that. i ate it around 10am and around 6:30 we were like "I guess we should have dinner" and i was like "ughhh no foooood!" which is nothing short of shocking coming from me.
i think someone should make me this for breakfast every morning

The chorizo & egg frittata was really good, although next time I think I'll puree the tofu instead of just crumbling it. The onion bits seriously make it!

The cream of broccoli soup with bacon flavoured chickpeas is delicious! The chickpeas don’t taste much like bacon (IMO) but they’re super tasty. I definitely recommend doubling the batch, my husband kept eating them all before he finished making the soup. The udon stir fry was pretty good for a weeknight meal, it was really quick to make and was pretty basic. Nothing mind blowing but still good. I cut back on the sesame oil a bit since it seemed like a lot.

Does anyone have the Kindle version of this book? I've almost convinced myself to buy it but don't know if I should get the paperback or Kindle version.

we also made the "irish nachos" this week.
very yummy as well. my husband is a very unpicky omni and tries all vegan food i make and he was a tad weary about the sauce as queso type sauces ive made in the past have been fail but he said he was really surprised how good it was.

For the first time since testing I made the tempeh bacon sandwich with spinach pesto and roasted pepper with the German potato salad and it was great.

I got the book in the mail and there are so many recipes I want to try! I made the beefy cheesy mac and it's good, but has a little too much mustard for my taste. Next time I'll use less, and will probably make only half the recipe because I have tons of leftovers.
Also, I've taken to calling the book Hearty Vegan Meals for Monsters. This is probably only funny to me.

Hearty Breakfast Bowl is a win. I was a little worried the sauce would not thicken without some sort of starch but it totally works. I added a little grated Daiya cheddar to make it extra cheesy.
I've also made the Irish Nachos. These are a great idea, but the sauce had a touch of sweetness from the soy creamer that I didn't care for. Next time I'll use plain, unsweetened soy milk or a different cheese sauce recipe.

This book continues to be full of win. I made the cinnamon sugar donut hole muffins, but instead of rolling the dough balls in cinnamon sugar I baked them plain. After the muffins cooled a bit, I dunked them in icing made from powdered sugar, cinnamon, vanilla, and almond milk. These were great and easy to make, it just takes awhile due to the rising time.
I also made the patty melt burgers and ate one on a bun with Daiya cheddar and mustard. I think it would be even better on toasted rye bread with sauteed onions, which I how I liked patty melts back in my pregan days.

this book is going to make me hugely fat. the recipes seem a little heavy on the oil. i never use near as much as they say.
our favorites are the Sloppy Jonis, the Irish Nachos, and the Hearty Breakfast Bowl.
i have a bunch more on my "to make" list.
i think i need to thank this book for introducing me to TVP. i never really used it before.
is this their only book?

is this their only book? I almost always cut the oil in this book if it's just for sauteeing. There are a few lower-fat recipes that are indicated with an icon too.
