 Post subject: Best tofu feta recipe?

Anyone have one they love?

I want to make spinach and feta focaccia tonight (have the foc rising!). I tried one recipe a few years ago and it tasted like raw tofu + a gazillion tons of salt.

I know a lot of recipes use miso, but I only have red, if that matters.

(I'm trying to replicate the focaccia Fresh Fields used to sell in their bakery before they became WF. Stuff was so good, at least to me at the time, when I was vegetarian. I'm sure I don't know what feta really tastes like anymore, so now is the time to get on with recreating this.)

I've never found a tofu feta that I liked. I really love the Vegetarian Times almond feta.

I looked through some of my newer cookbooks and decided to try the AVK recipe. I just uses lots of lemon and pantry ingredients, plus it has nooch.

I have the most incredibly fragrant dried oregano. I got it from the WF bulk bins. It smells so amazing I want to dump it in everything, so this gave me a good chance to use some.

I just remembered the sunflower feta from YRR. That is pretty good if you have raw sunflower seeds around.

If you have a good recipe, post anyway--I'm sure other people have this question from time to time too.

I'll use the leftovers tomorrow In the AVK Greek Salad.
