It makes a lot and takes a while to process in the processor, so I'd recommend dicing the beets into smaller pieces. And I increased the cumin and red pepper flakes because I thought it could use a little more spice. I love this dip!
Makes for a delicious sandwich spread with some greens and baked hummus (I used my go-to recipe, the sweet ginger tofu from Peter Berley's Modern Vegetarian Kitchen).
