I want those peppermint things!

I got this book recently but just looked it over for the first time last night, so much fantasticness. It just went on and on, it felt like the never ending vegan cookie book. I am in love. I am so very very excited to bake something from this today but don't know where to start.

I wanted to get this at Borders today with my 50% off coupon, but the only copy left was a little dinged up. I know it's just superficial, but if I'm paying for something it better be perfect. Arrrgh, stupid Borders not having more than one copy on the shelf! I wanted to ask someone if they had more in the back, but figured it would take them a while to find it if they did.

I'm making biscotti for Christmas and it's even better than I remembered it during testing.

So far I have baked the eggnog cookies and the truffle cookies, both yummy in my tummy. But my only qualm was with the White Russian cookies. The dough was crumbly as all heck and adding a lickle bit more soy milk didn't make a difference. Any suggestions?

Huh, I just checked my tester notes and I only used 1 tbsp. of milk and when I checked the other tester comments a few people had to add more flour. I guess I would keep adding little bits of soy milk at a time until it holds together.

I made the biscotti (plain with almonds) and it was AMAZING. So good. I brought a bunch in to work, along with a lots of other cookies. All the biscotti were gone so quick and everyone was raving about them.

So far I made the Glazed Apple Cider Cookies and the Soft and Delicious Oatmeal Cookies with cashews. Both were very good but I have to say.....the Oatmeal cookies with cashews are my new favorite cookie. Next up are one of the choco chip cookie recipes.

I got to flip through the book at Borders and it's so beautiful! I have to make sure I'm not getting it as a Christmas present, but I will have this book! I really can't get over how beautiful the book is.

I made Lemon's dark chocolate truffle cookies (amazing), English toffee squares (so easy and yummy), and candy cane chocolate chip cookies which were just ok and took me quite a bit longer to make then the directions call for. I was also going to make the snickerdoodles but got confused with the directions, the ingrediants list cornstarch twice and not sure when to mix in the appropriate amounts.

Dammit, that is pretty confusing. The first listing of cornstarch goes with the wet ingredients, and the second with the dry.

I'm so bad at baking cookies. My boyfriend and I tried the Soft Peanut Butter Chocolate Chip cookies and they turned out pretty crispy and fally aparty (they were this way before baking, too). We made them with the kind of peanut butter that is just nuts and salt. I just finished making a batch tonight with regular ole bad-for-you peanut butter and the batter was so wet that I had to add a lot of extra flour and it was still quite runny by the time I decided to try and stick it in the oven. The cookies look nice, but I didn't know how flat I should have made them before cooking therefore they are a little uncooked on the inside.
I'm so determined to get the hang of baking so that I can do justice to all the wonderful recipes in this book!

I got this from the library yesterday and it is so going on my to buy list, it is gorgeous! Pure food porn regardless of if your vegan or not, I've narrowed down what I want to try first to a short list of anything with peanut butter in it.
I'm intrigued about the root beer float ones though, I need to investigate this root beer extract and see what it actully is. I'm not even sure I can get it on this side of the world.
