I've long been a Nava Atlas fan, and bought this cookbook about a week ago. I think it's her best one yet. Easy, innovative, whole-food, healthy recipes that my picky family mostly(!) love (or at least will eat without complaining too much, sigh...). So far the following have been hits:
- chickpea and kale sandwich spread
-chunky bean spread (uses pinto beans and green olives; I was scared but somehow it works)
-quinoa and red lentil burgers
-beans and greens burgers (uses hemp seeds which is a great idea. I LOVE this recipe; I've made it several times now)
-pinto bean and quinoa sloppy joes
-homemade chocolate energy bars (dates, hemp seeds, chia seeds, and sunflower seeds. Amazing!)
-skillet barbecue-flavored beans

Thanks for reporting on this one. I had wondered about it. Before I went vegan I loved Atlas's Veg cookbook Vegetarian Celebrations, and I still the Baba Ganoush recipe from that book is still my go-to recipe. But generally, I've found her vegan recipes bland (I had little like with the original Vegan Express) so I've been reticent to try a new cookbook of hers now that I'm vegan. It's great to hear that this one works for you and I hope we get more opinions. If enough people like it, I might take a chance on it too.
