I made the omelets and blueberry scones this weekend. Both were great. I used soft tofu for the omelets and had to add about 1/2 water (just as the footnote in the book says).

I'm excited to try the broccoli quiche, but my boyfriend is hoping for the traditional broccoli 'n cheese thing, so I bought a block of FYH cheddar. Would adding some shreds be a good or bad idea?

I was going to make the Zucchini Spelt Muffins today but forgot the flax! Tomorrow, I'll get some flax and do it then. I was so looking forward to those muffins too. :(

The zucchini muffins are my favourite! I've been making them pretty much every weekend so I can take a couple to work each morning during the week for breakfast.

I love how many pictures there are in this cookbook.
We made Tofu Benny this AM. Holy goodness!
I'm glad there were leftovers.
The homefries remind me of this old truckstop we used to spend all of our nights in high school. Bottomless coffee and truckers galore! So good!

If I put things into the freezer I always forget about them, then rediscover them months later when I'm digging in there looking for something else.

So far I have made 7 recipes out of this book and they all have been outstanding.. Especially the quiche.

I make the peanut butter waffles at least once a week, always adding cinnamon instead of nutmeg. They're so delicious and filling, I make them for dinner when my food money is low.

I "borrowed" one of my dad's (three! he has three! He can stand to lose one) waffle makers just for the recipes in this book.

I made the zucchini muffins this afternoon before I read this thread, so now I am even more excited about them! I have to wait to eat them though. For some (odd?) reason, I prefer muffins that have been frozen and then thawed to muffins fresh out of the oven. So tomorrow...
I also made the tofu scramble to take to school for lunches this week so am looking forward to that too.

I made the Lemon Poppy Seed muffins yesterday, though I subbed chia seeds for the poppy seeds with great results. They were delicious fresh from the oven. Later I warmed one up and spread homemade blueberry jam on it, that was a treat.

I made the bagels last weekend and I am VERY pleased with how they turned out, but I want them to be bigger. Has anyone made 8 from the recipe instead of 12? I'm wondering if I would need to increase the boiling time or just the baking or neither?

Yummy! I made the scones with the berry variation, using 1.5 cups of raspberries and a half cup of white chocolate chips. My scone hating hubby ate 6 of them. I ate the other 6. This was in a span of 24 hours. Note to self, never ever EVER make these again. They are just too good.

I'd never liked scones much before, but these are insanely good. Boyfriend hates fruit in baked things, so they're all mine... I'm in trouble.

We made the Chesapeake tempeh cakes yesterday. I like them well enough, but they are too dry to eat without some sort of sauce.
I made a double batch hoping they would be good for lunches this week. I do not have access to a fridge, so the remoulade is out. Any suggestions to make them a better lunch choice?
