 Post subject: Freezing guacamame

Today I made the guacamame; since my edamame came in in 12 oz package, and my avocado was big, I'm going to freeze half. I'll tell you how it tastes next week. I did not put tomato in the part I'm going to freeze. I will taste test this next week, I've been using the recipes from the book for lunches at work. I work in the public school system, and accompany students to the cafeteria. I've had a lot of comments on the things I bring, especially at this school. (The principal is veg). I am working on shifting my diet to mostly veg, and I just have to say

Appetite For Reduction rocks!

i freeze guacamole all the time, and i usually get edamame frozen, so i don't see why freezing would negatively affect guacamame.

Based on my experiences freezing guacamole - I think it will be fine as long as it's airtight - I use the smallest container it will fit in and put a layer of plastic wrap right on the surface of the guac - that seems to work best for me.
