 Post subject: Problem with carrot cake and coconut lime cupcakes not risig

Has anyone had this problem? I've made a lot of the cupcakes from the cookbook and they've all been wonderful, except the carrot cake and coconut lime ones. They fall in the middle. Yes, I'm following the recipes correctly (the carrot cake cupcakes I've made twice with the same result each time). I'm at 5000 ft altitude, so I'm wondering if I need to make some adjustments to the recipes. Any help would be appreciated!

I have no experience with high altitude baking but I have definitely had the sinking cupcake issue before. I don't know what caused it but it only happened once or twice and hasnt happened in a really long time. I did google the altitude thing really quickly and found this:

Adjustment for 5000 feet:

Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
Reduce sugar: for each cup, decrease 0 to 2 tablespoons.
Increase liquid: for each cup, add 2 to 4 tablespoons.
Increase oven temperature by 25 degrees F.

I remember many people having all kinds of issues with the carrot cake cupcakes so that recipe seems to be somewhat finicky anyway.

I'd say it's definitely the altitude! I made muffins at my in-laws' house in Colorado without adjusting anything and they were like little flat rocks.

Yeah, I'd say that it's the altitude. Also, check the front of the cupcake book for reasons cupcakes sink. Overmixing and opening the oven to early are some other culprits.
