i'm starting to think of AFR as the ultimate cookbook. Everything is fast, cheap, healthy and tasty.

Vegan on the Cheap and Quick Fix Vegetarian (both by Robin Robertson) are both great. I have Vegan Express but have barely used it. I know I made a couple things from it, but I don't remember what they were and they were just okay.

+ a lot.

Joanna also mentioned (in the book? on the blog?) about making large batches of the marinara, nacho sauce, bechemel etc for the week (or longer if you free them) to make easy bowls (rice/pasta, baked/steamed/fried: veggies/tempeh/tofu/etc).

Also making the seitan in batches and freezing them for later makes meals easy.
