Anupy Singla's newest cookbook Indian for Everyone is due out on October 14th! It will be very vegan-friendly from the look of it.

I made a bunch of stuff from Vegan Indian Cooking yesterday and loved it all! Three different kind of chutneys (I had made samosas and also the masala potatoes and lemon curry from Rebar and Extraveganza respectively so they went well with the chutneys, especially the mint-cilantro and coconut), the North Indian tomato soup (amazing with my homegrown tomatoes!), and the wondrous mushrooms in cashew cream. What the hell, the latter was beyond amazing! It was the dish I was making with the most question marks, but I will make it again and again. The lemon-y cashew cream was just amazing, and I'm never appreciated criminis so much (I did sneak in a few chanterelles too with the onions/garlic).

Basically, made an Indian feast for company and they think I'm a genius cook.

I was in the mood for the warm spices of Indian cooking, maybe because of fall settling in! So I made the "Spiced Tofu, Bell Pepper, and Tomatoes", with the following modifications: no chiles, no fenugreek leaves, reduced amounts of sea salt and cayenne, and I stir-fried the tofu instead of baking it. Easy, good, just what I was looking for.

I am wondering how this book compares to other vegan (or vegan-friendly) Indian cookbooks, if you do have others (it's my only Indian cookbook)? I would love to have one with a desserts section!

I've had "Vegan Indian Cooking" for a couple of years now and only just got the nerve to start accumulating the spices I need in order to tackle these recipes. I finally cooked from it last night and made Punjabi Curried Beans (Rajmah-Inspired Curry), pg 143. The asafoetida and black cardamom really make a difference, my whole kitchen smelled like an authentic Indian restaurant!

I used canned kidney beans, which was probably a mistake, as the finished product wasn't as creamy as I'd hoped. It was also way too spicy for my Indian husband (I somehow have a higher tolerance and I'm a pasty white girl who was raised on mashed potatoes from a box) even though I used only two serrano peppers with the seeds removed. Having said all of that, I would definitely make it again! It came together easily and I loved the flavor. I just have to remember to use dry beans and halve the peppers and cayenne. I served it with green chutney and basmati pilaf, both from "Vegan Eats World."

I've cooked a little bit more from this book ("Vegan Indian Cooking") and have had a lot of success. I'm currently sipping on "Anupy's Masala Chai," pg 229, and it's amazing. The black cardamom adds a smoky element to it that I just love.

The Cumin Rice (Jeera Chawal), pg 191, is great. The flavors are not overpowering but perfectly compliments whatever Indian food you might be having. It also smells wonderful, mmm. Next time, I'll cook my onion longer than she says (2 min) so it gets browner.

Best yet is the Crackling Okra (Bhindi Masala), pg 178. I'd never cooked okra before, but I was prepared for the slime. I ended up having to cook it at lot longer than she says in order to get rid of it. With lots of amchoor and more oil for frying, I managed to defeat the sticky goo and it turned out delicious.

It turns me off that she doesn't suggest a specific bean or lentil for every legume recipes. It's great that you can make it with any one that you want, but what's traditionally used? What does she suggest? I end up searching online for similar recipes and seeing what they use. I've been gravitating more towards Vegan Richa's cookbook for dals because she's specific.

I have put my name on a copy of this from the library and I cannot wait. Sadly no one else in the house will eat indian but I plan to stock my freezer with leftovers.

I suggested the library buy the slow cooker book and am hopeful they will.

You'll love it!! It'll make your kitchen smell like heaven.

I made the tofu pakoras (I think she calls them Tofu Chickpea Fritters) yesterday and they are fantastic. I misunderstood her slicing directions so I came out with 3xs as many tofu squares, but there was plenty of batter and I actually really really liked how thin the tofu was. It didn't taste beany at all so I could pretend I was eating paneer. I fried them in refined coconut oil and I'm glad I did, because they soaked up all the oil. I served them with curry ketchup (curry powder + ketchup) and green chutney, sooooo good. Leftovers reheated perfectly in the toaster oven.
