I’m looking for some new Italian/Mediterranean recipes, does anyone have any favourite cookbooks/blogs/websites to recommend? I already own Nonna’s Italian Kitchen, which I love, but I’d like to find some new recipes that aren’t quite as time consuming.

Vegan Italiano and The Mediterranean Vegan Kitchen both by Donna Klein seem right up your alley!

I'm a huge fan of The Mediterranean Vegan Kitchen by Donna Klein as suggested above. Haven't tried her Vegan Italiano book yet. I really dig her recipes because they all use supermarket ingredients and don't use tofu, tempeh, seitan, etc (all things I love but try to enjoy in moderation). The only bummer about her cookbooks is the lack of photos. Still, highly recommended!
