I love the banh mi, too. I actually have the moo seitan in my slow cooker right now to make that tomorrow.

I have a question about the unfishwich. What do you do with the melted earth balance?

I was planning on making the chickpea shawarma later this week! I have one cup of plain whole soy yogurt on hand (still no unsweetened to be found) - do you think it will be too sweet? Or has anyone subbed unsweetened soy milk? That was my plan.

I'll have to try the bahn mi next! Yesterday I made the green monster bread, and I am in love.

I couldn't say. I've only used unsweetened. I did accidentally use sweetened in another savory recipe once upon a time, and it was still great, so maybe?

I had the Ranchocado last night with onion rings from Trader's Joe's. Delish! I offered to make one for my husband, and the fool turned me down. He regretted it when he tasted the ranchocado spread!

I've been obsessively making the bacon chickpeas from the peanut butter/banana/bacon sandwiches. They are good for everything! Salads, sandwiches, snacking. Yum.

We wanted something not too heavy but different for dinner, so we made the apple radicchio sandwiches. I had most of the ingredients (only had to buy pumpernickel bread and radicchio) so it was fairly pantry friendly. I don't usually have daikon around, but I'm sure any radish would work.

They were very delicious! Love the crunch from the pecans in the cream cheese spread.

The only thing I would change is to slice the apples next time so they aren't as messy to eat.

This was a winner. The only drawback is the entire tub of Tofutti cream cheese, so these aren't the most economical sandwiches to make.

Aw crepe, I just discovered the onion rings (that I mentioned above) from Trader Joe's are not vegan. I feel so guilty. I swear there wasn't milk in there when I bought them the first time. Sorry guys.

Do you mean the bag of crunchy onion ring snack things that were sort of like Funions? Because those used to have a V for vegan on them. So if they are not vegan now, that is new, and very sad.

I got eggplant and purple cabbage in my CSA this week, so made the Asian eggplant sandwiches for the first time. So good! So easy! I made them into wraps instead of baguettes, but I'm sure it would be delicious either way.

Looking through this cookbook reminds me that there are still a ton of things I want to try. Has anyone made the beet and barley burgers? Do they taste similar to the PPK/Isa Does It beet burgers?

Answering my own question from a couple of months ago.. I made the beet and barley burgers this weekend, and they were FANTASTIC. Easily one of the best veggie burgers I've made. I love the flavour of the BBQ sauce. The burgers were easy to shape and cook, too, and held together pretty well in the pan. I'll make these again for sure.

FYI I subbed regular bread crumbs for the ground oatmeal (I didn't have any oatmeal) with no problems.
