Since vegan sausage is popping up in everyone's cookbooks now, I was hoping to find a similar recipe to the Italian (eggplant and fennel) and more important the apple sage. But no! everyone does spicy chipolte. :( I am not really confident in my veganly cooking skills to just whip it up off the top of my head, but if anyone has any idea where to start that would be fantastic

Hey daisysunshine, do you have the Vegan Brunch cookbook? There are three sausage recipes in there, and I imagine you could use those as a starting point. Or there's this Simple Italian Sausage recipe on the ppk database, it doesn't have eggplant like the Field Roast but it does have fennel: http://www.theppk.com/2012/01/vegan_sausage/ .

I just wanted to add - sometimes I do a cross between the recipe hdog linked to, and the sausages in VB, especially when I don't have leftover mashed potatoes on hand.

I think i am going to experiment with eggplant too. (i'm assuming I'd just have to mash it up like potato). Field Roast is delicsh - but WAY too expensive. 7.00! :0
