Finally got it. Made my first recipe from it last night: Jerk Seitan. Mmmmmmmmmm SOOOO excited for lunches this week (I put it over rice and poured the dipping sauce over it all and mixed it up really well. Looks SOOOO good.

You should get it NOW. The jerk seitan is to freakin' die for! I just served it with rice & sauce over... Mmmmmmmm! And Mr. Scruffle (the omni) also loved it.

Her chicken style seitan is awesome. I'm going to start making a ton of it and keeping it in the freezer for quick eats (I asked, you can freeze it and thaw it in the fridge. Alicia even said you might be able to thaw in the microwave). So far I've only tried the jerk seitan, but I'm pretty convinced that everything she creates is awesome. I've never had a recipe of her's I didn't love (same goes for my omni Mr. Scruffle).

I just bought this book, along with Veganomicon, today. I wasn't even thinking that it was the one I had read about here yesterday, I just thought it looked nice. That's one thing I don't like about going to the bookstore, I can't access reviews from there, but I'm glad I picked it up now. I really need to start keeping a list of books I want when I go to the bookstores.

I am excited to try the oyster mushroom po'boys and the no'fish etouffee with lobster mushrooms. I am intrigued and maybe a little obsessed with the idea of these ever since I ordered an amazing po'boy at Sprig and Vine in New Hope, PA.

Microwave defrosting tends to dry it out quite a bit though and make it tough so I just stick it on the fridge or on a plate somewhere and let it do its thing. Anna

I only microwave defrost when I don't plan ahead... And, honestly, it wasn't really dry at all in the stirfry... Although I do think putting it in hot water would probably be a good middle ground (quick and should retain moisture).

I've been trying to cook stuff from this that I didn't test. So far, I've made the Papa Chorizo Frittata and the Garlic Green Beans. They were both amazing. The frittata is one of those things that you eat a bit, then every time you go back into the kitchen, you cut off another slice until you've eaten 1/3 of it and have to put it away before you eat the rest. And the green beans - I thought of making them, then had them in my mouth 10 minutes later (I didn't bother with the almonds). They were that easy, and delicious.

Is it the same mac and cheeze recipe as in the comfort food book? If so it is fabulous! I made a big dish for dinner the other night and it is almost gone!

I'm pretty sure it is the same recipe - I have not compared it line by line but a few of her staple-type recipes are the same (her seitan, sage gravy, etc).
I'm SO excited about the "tourkey" cutlets! Future-mother-in-law-unit is coming for Thanksgiving and she has recently starting adventuring with vegetarianism so I'll be making the Thanksgiving spread for the 3 of us Vegan Style!

It's the same recipe from VCF, everyone loved it so much I just couldn't leave it out of Vegan Celebrations. Glad you love it. Thanks to everyone for your support! Thanks, Alicia! I bought future-mother-in-law-unit Vegan Comfort Food for a "Yay you're going vegetarian" gift. I might get her Vegan Celebrations for Christmas.
The only thing I'm struggling with now is what to bring to this work potluck that won't be so obviously vegan that it scares everyone off. Haha

I wondered about it too because there is nothing even close to cheese in it but the texture is bang on and the flavour is awesome. I used almonds instead of cashews & mac nuts and it still turned out great. I also added 1/4 tsp turmeric (I put it in everything!), used paprika instead of cayenne (i am a big baby when it comes to spice) the only thing I would do next time is add a pinch more salt. I wish there was a way to get crispy breadcrumb layers, that is what makes the dish super good!

We love the mac & cheez too!
I'll be making part of the Celebrations menu for Thanksgiving: Tourkey Cutlets, sage gravy, and cornbread stuffing. Only the husband and I will be eating our food, so I won't be making the entire spread. Since the Cutlets can be made up to three days before, I'm hoping to have the energy to make them tonight. That's really convenient, and takes away stress since the main dish will be made!

I might even cut some of the recipes in half since it's just us three. I might even see if I can't find a stuffing mix that is vegan (with alterations, of course... Better than bullion instead of beef/chicken broth, etc). I am about to sit down now and make my grocery list. Excitement!

Have you checked out the Corn Bread stuffing recipe on page 175? That's the one I'm making. I mixed the dry ingredients together and will be finishing it tonight. Looks like it's going to be delish!
