I got this as a gift and I have tried a few things. I love love love the bean and cheeze enchiladas with the sauce recipe! I never like enchiladas till I made these!

I saw that at the bookstore today, but got her other book; Vegan Celebrations, instead. I'm going to have to get Comfort Foods at some point as well though.

Those banana chocolate chip pancakes are amazing and the Orange Chick'n is really good. I haven't cooked much else yet though.

+1 to all the recipes mentioned! We make a whole pile of the pancakes and freeze them. And the tahini coffee is the best hot drink I've ever had! I definitely want to cook my way through this book.

The yellow cake with chocolate frosting is my favorite, favorite cake. The oatmeal cookies with chocolate chips, sugar cookies, loaded baked potato soup, all purpose cupcakes ... everything I've tried has been awesome! Definitely one of my favorite cookbooks!

These recipes sound very, verrry tempting. Unfortunately, I won't have any money to spend until after Christmas. But I think this will be at the top of my list!

oh man this cookbook is so yummy! i really love her mac and cheeze recipe although i cut the oil in half (which didn't affect the flavor or texture) and added nooch, so creamy and dreamy! i also adore her caesar salad recipe, its my favorite one. the fool-your-friends tacos were good as well. i borrowed this book from the library but am planning on purchasing it cuz there are so many tasty looking recipes i look forward to trying.

I got this cookbook for Christmas (but it arrived a few weeks early) and I hadn't made anything from it yet. Nothing in it looks amazing. I made the red beans and quinoa tonight and it was really good. Most of the goodness was the bbq sauce that is also from the cookbook. I really need to get my asparagus in gear to try out some of these recipies because appetite for reduction is coming in the mail in a week and I just know everything else will be forgotten about when that arrives.

I made the mac and cheese and it was sooo good. So good in fact that I broke my food processor while making it and the cashews didn't get ground up and I thought it was ruined but it still turned out awesome. I can't wait to try it again when I get my vitamix.

The mac and cheese recipe is almost identical to the vegnews recipe. I really like the maple smokey beans (with 1/2 the liquid smoke), and the chick'n fried seitan. I was really disapointed with how many recipes rely heavily on vegan cheese. It's expensive, doesn't really taste that great, and quite a few of the recipes call for ~2 cups.

That was the one thing I wasn't crazy about, partly because I can't find most of the cheeses she mentions (anything besides mozzarella or cream cheese). But I'm anal and counted once. It's only about 10% of the recipes. And except for those recipes and a few others (burger and chikn' sandwhich ideas and tvp dishes), all the other recipes are made with whole foods. So 75% just use regular grocery store staple foods.

About 8 months before Quick and Easy Vegan Comfort Food came out I blogged about the vegnews recipe and the origins of the adaptation for both my mac and cheeze recipe and Allison's mac and cheese recipe in VegNews. Here's the link, which also has an earlier version of the recipe before it was finalized for the book http://veganguineapig.blogspot.com/2009 ... heese.html The basic gist of it is both our recipes are adapted from the Unprocessed cheese sauce recipe in the Ultimate UnCheese Cookbook by Jo Stepaniak (which by the way is a phenomenal book). I've made the hummus from this book three times now, and the second time my husband said "This is the best hummus you've ever made!" Since hummus is a staple in our house, that was quite a statement. I believe this will be my go-to hummus recipe from now on.
