Mine came Tuesday! I have already made the Moroccan Chickpea Soup! It's very very good; great for when you are nursing a cold, like I am. Exotic but comforting. I'm looking forward to many of the recipes though! So many of them sound good.

This is a nice cookbook -- beautiful photos and nutritional info, tips and suggestions for every recipe. Kathy has bean recipes for many categories including breakfast (bean muffins!), soups, dips and spreads, casseroles, salads, stove top dishes and desserts. I am making the Tomatillo, Tomatoes, Black Beans and Rice dish for dinner tonight and plan to make the Chickpea Greek salad with Tofu Feta tomorrow. I really like the look of this cookbook so I have high hopes for the dishes I make from it.

I had a look and everything looks pretty easy and tasty. I'm suspicious of beany baked goods though. We'll see!

Can't wait to get my copy.

Don't be afraid of beany baked goods. I haven't tried these recipes but I've made cookies and brownies and they turn out well.. just a bit more cakey than dense.

I just got mine yesterday. Had I been able to score some eggplant, I would have made the Ratatouille. I may try to make it this weekend. Looks like there are a lot of slow cooker recipes in there, also.

I got this and it looks awesome. Love the design/layout, and of course the list of recipes on each chapter page -- although I'm not in love with the index but that's okay because the introductory section is awesome. The introductory section alone makes me feel like I can finally join the cool kids and buy dried beans and cook from scratch. I do love that every recipe has instructions on to either make the beans from scratch or has the equivalent number of can(s) of beans to use. Definitely plan to make time to sit down and go through and start dog earring recipes. One of the mac n cheese recipes was calling my name, perhaps the one with the cashews listed as an optional ingredient?

i put it on the wishlist. (and when i was looking for this one, i saw that crecent dragonwagon also has a bean-centric book. i would have to flip through that one before making a decision. in case there's too much dairy and whatnot.)

I've now made the Cashew Bean Queso and the Smoky White Bean Spread, as well as the Oatmeal Blueberry Waffles. Everything so far from this book has been really, really good. I'm a huge fan of Kathy Hester now! I'm off to go look at her other books on Amazon...

The creole white beans are really good. I had to turn up the heat and cook longer than recommended to get them to break down and get creamy. After the maximum time she recommends, it was still pretty soupy, and the beans were just barely cooked.

Sometimes the beans you buy at the store or even in bulk bins have been there awhile. If the beans are older they will take longer to cook. The issue is you usually don't know that before you start cooking them.

I'm glad you kept cooking them until they got creamy - that's the best part of that dish.

I made the stove-top mac n' beany on page 160. i loved that kathy included a special note on this recipe telling those of us with nut allergies not to worry about the optional cashews. i was concerned about the 1/2 cup of nooch but the sauce really really good! the recipe is a definite keeper! i only made 2 servings and put the leftover sauce in a storage tub. i'll freeze what we don't use tomorrow.

I have both. They're very different. Crescent's is the most vegan friendly omni cookbook I've ever seen, if that makes sense. That one I would say is more specialist and involved, and the Kathy Hester one is more midweek quick cooking friendly.

I only got this Friday but I like it a lot. My husband made the chickpea biryani yesterday. For our taste we wanted more spice, but it was nice.

I feel like it always takes me longer to cook beans than cookbooks recommend, on several different stoves, gas or electric. I don't know what the deal is.
