Hello! I've cooked my way through AFP several times over and I'm looking for some new recipes that are low calorie and tasty! I'd love to find a new cookbook to go through, or recipe suggestions would be great, too!

One of my faves is cream of mushroom soup with blended cauliflower as a base. I'd post a recipe but I mostly freestyle it.

I highly recommend Tess Challis' cookbooks. Very flavourful recipes. Some of her recipes are repeated within different cookbooks but I still think it is worthwhile looking through them all.

This one is her newest one:

I also listed my favourite recipes of hers here:

Hope this helps.

Another vote for Tess Challis' books. She color codes her recipes: green for healthy/low fat anytime, blue for moderate/one a day recipes and purple for every so often.

This isn't a cookbook, but I cook a lot from fatfreevegan.com and everything I've made has been great.

Some recent things I've made and loved:
Shepherd's Pie: http://blog.fatfreevegan.com/2011/11/na ... s-pie.html
Spring Green Quinoa: http://blog.fatfreevegan.com/2008/04/sp ... uinoa.html
Spanish Rice + black bean burritos: http://blog.fatfreevegan.com/2012/03/bu ... beans.html

The shepherd's pie was really the stand-out, though. It made a ton of food, it was cheap to make, and it was really good.

eta: Oh, we make this salad a lot too, it is really great, especially for packing lunches: http://blog.fatfreevegan.com/2013/06/ka ... beans.html

I've been cooking like mad from the Forks Over Knives cookbook, and everything has just been fantastic.
