Anyone have this book, and made anything from it? I've had it for a while, and just recently decided to start cooking some dinners from it. This isn't truly a low-carb cookbook, because it uses veggies, beans, grains, etc. The recipes sound really good and healthy.

Suggestions? Experiences? This week I'm planning on making the Eggplant Lasagna with Spinach Pesto, and the Sinless Shepherd's Pie.

I own it but haven't used it. Let me know what you think. It definitely looks like the best of the handful of moderate-carb vegan cookbooks.

I have this one too, but haven't made anything that I can remember. The recipes look a little low on spices though, but that's often the case with Robertson and it's easy to mend.
