i made GF version of brainless banana pancakes from HIAV, using Bob's GF mix. not bad.
i also made empenadas from some VT recipe. good...and really cute. i posted them today's blog entry.

Yesterday I made the African Sweet Potato Stew from Vegan table. It has a great flavor but it was a bit too thin so I would tweak it next time.
Today is going to be crazy. I am making...
pumpkin cheesecake from Fat Free Vegan Punk Rock Chickpea gravy from VWAV (subbing white beans because I like it better) Desdemona's stuffing probably the white seitan from Viva Vegan, possibly subbing some sage for the cumin.

Oktoberfest weiners from 500 vegan recipes put them in a mushroom quiche (V brunch recipe) about to make scrambled tofu like vwav and then tempeh sausage crumbles (and mix them together!)

About to make Autumn Latkes and the horseradish dill sauce from Vcon! I remembered last minute that these are the best things ever and thought they would make a good appetizer. Not looking forward to grating everything by hand though.
Also making the pumpkin hummus from Everyday Dish. Finally a use for the smoked paprika I found a couple weeks ago!

Yesterday I made the Udon with Shittake Mushroom and Kale from VCON, delicious and some leftovers for lunch.
I made the Mexican Hot Chocolate Cupcakes from VCTOT, also delicious but a lickle bit crumbly. Today is an off day today so I get to plan all manners of goodies for tomorrow.

I made the Pot Pie from VCon for the first time today. It came out perfect and my boyfriend loved it. I've been making more recipes that have pastry in them lately. I finally feel like I nailed pizza dough the other day. I've been making the VwaV recipe for a while now but the one I made on Sunday was perfect. Usually I avoid anything that involves dough. I think I've gotten over that cooking hurdle, I think once you get the hang of it it's not so hard.

I agreed to try and stay out of the kitchen for one day, so I only chopped carrots for VWAV's carrot bisque; I'm hoping to atempt my first tamales tomorrow, then it's Saturday Night Brunch for a friend. And the bisque.

The pastry is easy and turned out so flaky, with the nice crunch of the small amount of cornmeal. I find that when the time changes and the days are shorter and colder my thoughts turn to pastry and biscuits as well. A little padding food for the winter.

i made the pumpkin cranberry scones from vcon. the dough was too wet and the scones turned out like giant cakey cookies. what did i do wrong to that flat thing going on? they were still really bitchin' though.
i made the fudge brownies from lickin' the beaters: low fat vegan desserts. i must say i was really disappointed. i would throw them away, but i hate wasting food. the only recipe i've liked from that book has been the sugar plum coffee cake. i've tried the chocolate chip cookies and they were so terrible i cried. has anyone had luck with this cookbook? i wanted to give it an honest shot, but i'm coming to the conclusion that desserts should never be low fat because just about every low fat recipe i've ever tried aside from the vcon lower fat banana bread has been just awful.

In the process of cooking what I'm going to eat for the week....Had no inspiration when I woke up. Definitely closed my eyes, felt up my cookbook bookcase, picked a book, opened said book, and pointed to a recipe to set the stage for me.
- Cabbage and Potato Curry with Fennel and Chiles (660 Curries - the recipe I pointed to) - Gingered Chickpeas (660 Curries) - A large batch of saffron basmati rice in the rice cooker. - Chickpea-Flour Roti (New Indian Home Cooking - veganized by using EB instead of butter) - Sag (New Indian Home Cooking)
Never realized how often I cook Indian (therefore, stocked pantry) until I realized that all I needed to go to the grocery to buy was cabbage and fennel. Saweet!

I haven't had any luck with this book, unfortunately. Both cakes I tried to make required much, much longer baking times than the recipe said and just generally didn't come out well.

I was traveling all last week, so I was ready to get back in the kitchen today!
Breakfast: Carrot Raisin Muffins from VWAV with rice nog Late Lunch: Chickpea Cutlets (propped my computer on the table and used the recipe from PPK), mashed potatoes and gravy, steamed veggies with Daiya mozz, and a side salad Dessert for dinner: Caramel Apple Tart (adapted from Honey Apple Tart from The 50 Best Dessert Tarts), with homemade caramel from VegNews
Mmm, today was a good day!
