I thought it might be fun to see what we are all cooking from our cookbooks! Today I made...
Buttermilk pancakes from 500 Vegan Recipes. These were loved by all! They will probably be my new go-to pancake recipe.
Breakfast sausage from Vegan Comfort Food. These were great and it makes a ton. The kiddo didn't like the fennel though. I had to sub chickpea flour for the soy flour the recipe called for because that's all I had. Not sure if it made a difference.
Refried beans from Viva Vegan. My son, the pickiest eater in the world, loved this. Probably because I left out the jalapenos. My partner also liked it but I though it was a bit bland. Again, probably because I left out the jalapenos!
Queso from Kittee's blog. So good!

Today, I just made miso and potato stew for meals later in the week (ran errands this morning so had breakfast on the run and picked up lunch and have leftovers of take out for dinner) and I'm about to pressure cook some chickpeas to make hummus later (for toast and bagels this week) and I'm about to shred a head of parsley as I sit in front of the TV to prep for my Tabbouleh with mint and pistachios, which I'm making tomorrow. Forgot the cucumber for it while at the grocery store today. I might leave it out (I don't much like cuke anyway) or if I wind up going downtown tomorrow, I'll pick one up.

About to make the spiced nuts from Eat, Drink and Be Vegan. I made them so many times last year at about this time that I thought I would never want to see them again. But I guess I was wrong. They are really good and a prefect snack to pack for my kiddo. Hopefully I will use moderation this time!

Oh, I love making spiced nuts. I often make the ones from Garden of Vegan with cashews. Addictive!
Today, I've made hummus (just a classic recipe, nothing fancy) and I just made the mint and pistachio tabbouleh. I didn't make the pumpkin ziti bake today because my freezer has no room. I'll have to make that later in the week. Now, I'm gonna sweep and mop my floors and then chill out and read and watch TV for the evening and eat my humuus and tabbouleh for dinner in a while.

Because I was so pissed off by the last batch of muffins sucking asparagus, I cooked Orange Chocolate Muffins. Big puffy jumbo muffins. Gorgeous!

I was going to make the Gingerbread Waffles out of Vegan Brunch, buuuuut I got kinda derailed and ended up making pumpkin spice waffles that were very, very loosely related to that recipe, ha ha.

Made the orange pudding cupcakes from VCTOTW for my son's bday. Dinner was tomato sauce with bay leaves from Mark Bittman and Lemon Rosemary Tofu from Nonna's Kitchen.

Broccoli Quiche from VB Oatmeal Raisin Cookies from VCTOTW Marinated Asian Tofu using the marinade on some leftover brown rice for our lunch.
