660 Curries by Raghavan Iyer
This book has been mentioned a couple of times here but deserves its own post. Where most Indian cookbooks are just disappointing repeats of others, this one is probably the only one you would every need. The majority of the recipes are vegetarian and probably half of those are vegatron.

Love, love, LOVE this book. Almost all of the vegetarian-but-not-vegan recipes are easily veganizable, and there are recipes in the book that have succeeded at making me like moong dal. This is no small feat, since moong dal has almost always tasted like licking the inside of an ashtray when I've cooked it before.

I keep checking this book out of the library. I think I need to just go ahead and buy it already.

Since I haven't seen anyone else post here recently....for those of you that have this book what have you made and loved? I have been a little intimidated by the amount of recipes and so have not yet cooked from it.
