I thought I had everything to make this but I must be out of French lentils! Is there any particular reason it has to be the French kind? It seems like since the whole thing is processed in the end it wouldn't matter that much but I have never made the recipe before. I have every other kind of legume.

You can use green lentils, just not red. Maybe use less liquid, too, since greens hold more liquid than french.

I made this yesterday with regular green lentils (I didn't have any french lentils) and it was the bomb. Speaking of bombs, a bunch of the chestnuts exploded in my oven and in the kitchen after I took them out because I apparently didn't score them deeply enough! My husband saved the day by roasting the rest of them outside on the grill... Tragic mess aside, we ate the hell out of the pate when it was finished!
