Super excited to finally have gotten a copy of this book!

Only snag I've run into before diving into cooking some of these amazing sound recipes is that I often cook for someone with a gluten allergy and was wondering ... what would work as a decent stand in for seitan in the recipes that call for it, since that's a no-no for her?

I just ordered some soy curls the other day and was wondering if they'd make a good replacement (have never had them yet tho; ordered them based on how good I've heard others say they are)...

I've used soy curls frequently in place of seitan in a lot of the VV recipes. (Not because I'm allergic, but because I am often lazy.) It's usually a good substitute though the seitan's amazing if you can eat it.

I've used tofu in place of seitan in a couple of recipes and actually, I like it more in the Arroz con Seitan than I do soy curls in the same. The Arroz con Seitan is pretty awesome no matter what you put in it, though.
