 Post subject: Eggplant bacon question!

i've never owned, or even seen liquid smoke before. so i got both kinds (it was cheap) hickory and mesquite. which do i use? i have no idea what it is like.

Use whichever! I go through phases of preferring one over the other. Variety is good.

I've had both.
Usually, if I have a choice, I'll select mesquite, but I have a jones for that ranchero-Mex smoke and barely bitter edge that is my legacy of living in Texas in developmental years.
But really as long as it is smoky, it is all good.

I have both kinds, but I've only used the hickory so far. It took me weeks to find the stuff (I could only get it interstate!), so I'm too scared to open the other one and have it go bad or something. It's like delicious liquid gold here.

I use both. Sometimes I mix them together. I don't think it ever goes bad. Ever. : ) I was so upset the store was out of eggplant today because I really want to make this!

This was exactly what I wanted to know, it's pretty hard for me to find any specialist items like this in the UK, but I have discovered that I can get it on Amazon, still not sure which to go for now, perhaps I'll try the mesquite.

The apple one sounds good!!! I accidentally spilled my bottle of liquid smoke when making the eggplant bacon so I'll need a new bottle soon anyway. :) Such a strong smell in my tiny kitchen!
