so, i grew up in a household where my mother was afraid of pie crust so she always bought the boxed stuff. let me tell you it's nothing to fear! also if you have rolling anxiety you can roll out between two sheets of parchment paper, waxed paper, saran wrap, two grocery store bags if you are trying to reduce reuse recycle and don't care about germs... and then transfer and peel off your roll out sandwich and you don't have to worry about tears, rips, or holes. i love pie dough. maybe more than the filling. is this wrong? if it is i don't wanna be right. even with the leftover dough from my mother's pie she would let me "sculpt" and cover it in cinnamon and sugar and bake it along with the pie for the last ten/fifteen minutes. delish.

The only reason I don't do it is because of limited counter space, but I don't think it's that hard given the proper amount of room.
I've seen lots of pre made pie crusts without lard, though, maybe you guys should stop shopping at the lard store.

i thought this was going to be the low-fat baking book Isa mentioned on Facebook a while back, especially with the image Amazon has for the listing.

I am painfully inexperienced in the ways of pie-making. But if there is vegan key lime pie, I'm pretty sure that Boyfriend will wait for me to make it, then punch me in the face and devour the whole thing before I wake up.

Well, except Whole Foods, where I have indeed found and paid way too much for lard free crusts.

My kingdom for one of these: http://www.zeer.com/Food-Products/Pet-R ... /000054857My family used to get these all the time, they don't sell them around here anymore. If you've never had one, the whole thing is like whipped cream. Usually when I see recipes for cream pie it means, this flavor of filling with cream on top.
