I know I've made this before, but can't remember and can't find the answer by searching:

Do I press the tofu before cooking?

It never hurts to give your tofu a good squeeze!

The recipe doesn't tell you to. I usually do anyway unless it's Trade Joe's extra-firm tofu, which seems a lot less watery than other brands.

I didn't bother, but I hardly ever do. The tofu I buy is super firm anyway. But when I'm dry frying tofu like you do in this recipe, I usually press it down in the pan with the back of a spatula to get the last of the water out. It just cooks away.
