Hi lovelies.
I'm going to a brunch tomorrow that's about 45 mins away from my house and want to take the Mushroom & Spinach Strata from Veganomicon. I've never traveled with tofu before so I'm not sure how to plan it. The recipe calls for 55 minutes of bake time - what do you think is a better choice?
Option 1: - Cook it fully then just reheat when arrive at destination - Cook for 30 minutes, travel, cook for the remaining time
Would love to hear any thoughts!

Cooking it partially probably wouldn't work too well, as it will cool down in travel down and the outside may get burnt during the second cook time before the inside cooks fully. I think it'd be best to either cook it fully then reheat, or cook it fully when you arrive.

I'd say cook and reheat. That way you won't monopolize the host's oven. I think this is the kind of thing that could be served warm - doesn't need to be hot, so i bet if you baked it and then wrapped it up in a towel and took it to the brunch you wouldn't even need to reheat.
