I absolutely adore Ethiopian food but how hot is this recipe? Is it for only people who like really firery hot food? What about someone who likes medium heat? I may need to adjust the serrano chiles. Thanks.

I always use jalapenos (hard to find serranos, or at least, whenever I've made it in the past) and anyway, it wasn't too hot with the jalapenos. It was very tasty with the jalapenos, too. I don't think I've ever actually tried it with serranos and I actually don't like seitan very much, but this is one recipe where I can eat it and enjoy it as long as I don't cut the slabs too big. I like thinner slabs so they get a bit more crisp.

i didn't find it too hot at all, but i may have a higher heat tolerance. easily adjustable, though. i've made it milder for a crowd and it was still awesome!!! ethiopian food is seeeeeeriously amazing! if you're a medium heat kind of person, this should be fine, especially with seeded jalapenos.
