I made the zucchini black bean tacos and the lemon garlic yogurt for lunch today. They were amazing. So many flavors. And so filling, too.

just made the cauliflower ricotta and spinach lasagna for my omni boyfriend and mother.. total hit! i even sneaked some mushrooms with the spinach when i pulsed it in the food processor! shh ;)

Made the lots of lentils and veggie soup for dinner, and it was great as usual. All I had were red lentils, so I used those and man did it take this soup up a notch! The red lentils kind of broke down and expanded a bunch which made the soup real thick and extra filling.

I put some italian sausage seitan in it, which isn't as healthy, but hot damn it's awesome.

I had a bowl of blue corn chips, with zucchini black bean taco filling topped with guacamame. Yums. Best left overs ever.

Things I have made and really liked thus far: caulipots (why would you not like these?) Chickpea Piccata forty clove chickpeas and broccoli (probably my favorite yet) mango bbq beans curried scrambled tofu lasagna (I'm thinking I might just forgo the tofu altogether next time and load it up with veggies) lotsa veggies lentil soup tortilla soup (just made this for dinner tonight)

Scarlet barley with cannellini paprikas was excellent! it ended up being haricot paprikas because I though we had cannellinis and we didn't but still, wow! we popped a bit of sauerkraut on the top.

I just finished my grocery list for the week and will be trying the caulipots with the chickpea cutlets from Vcon, the Creamy Mushroom Pasta and the Black Bean, Zucchini, Olive tacos.
We have tried the 40 Clove Chickpeas and Broc- loved it! The Pasta Con Broc was good too! Unfortunately, we only had red wine (I did not see it needed white wine) and although the dish was pinkish in color, it tasted great. Have also made the Buffalo Tempeh, Cool Slaw, Sushi Roll Edamame Salad, and the Everyday Chickpea Quinoa Salad and they were all winners!

I made the chili verde con papas for a dinner thing last night. Pretty good! Instead of (I think) 2 jalapenos for the spice, I used one jalapeno and two serranos. Perfect spice level. Mmm. I also added broccoli and a bunch of seitan.

Is Easy Breezy Cheezy Sauce supposed to turn into flubber when refrigerated? I used arrowroot instead of flour in the amount specified, and the consistency was fine at dinner. But I just popped in for a snack and to pack my lunch for the morning and it turned to flubber. I nuked it for a minute and a half and the consistency improved slightly, but not terribly so. Help! I was really looking forward to this for lunch tomorrow.

We made the Caulipots last night for the first time and they were SO good! We doubled the recipe and have a ton leftover so I am thinking we will have Caulipot patties one night this week.

It's basically a nooch pudding. add a little water or broth and reheat on the stove or in the microwave and it'll come back to normal.

Made the Smoky Split Pea Soup last night. SO GOOD! We added potatoes to it too, and OmniBoyfriend added ham. He was impressed and so was I! And now I want to put smoked paprika in everything.

I made the hottie black eyed beans and greens again and didn't have sweet potatoes to go with them, so I made caulipots but used apples instead of the cauli. Prob not as high a proportion, but it still rocked.
