oh my gosh! So many great recipes in this beloved book that I have yet to try. Somehow, I have decided to buckle down and get to work trying them all! I love reading other folks' suggestions.
This week I made the Thai Roasted Root Veggie Green Curry and the Red Lentil Root Veggie Dal - both totally delicious and loved by my hubs and me.

It was my 4th day in a row having the broccoli chowder so to vary it up I added a bit of chili powder while reheating. I added too much and burnt my insides. I ended up having to take some immodium this evening. Oops.

I think this will have to be my next cookbook purchase. Either AFR or VWAV. That requires money, though. Birthday is in two months though!

I made the lettuce wraps tonight, and they were delish! I haven't been having a ton of luck with AFR - most of the recipes I've tried I haven't loved. With most cookbooks, I'll donate it after the 3rd failed recipe. But you guys kept raving about it, so I figured I was just trying the wrong things. This recipe validated the book, and I'm happy to soldier on and try more!

I used beets, carrots and yams, I think, but I really can't imagine someone not loving that recipe.

I'm 2/2 on successes this week! I made the Hottie Black-Eyed Peas & Greens, and YUM! I tasted the kale before I added the peas, and I now have my new favorite method of preparing kale. It was super delicious.
J-dub, anything with the word "curry" in it is a win in my book! That'll be on the short list. :)

Just made the Tortilla Soup today for the first time. I was too lazy to soak kidney beans, so instead I threw in some large chunk TVP I had lying around. OMG, this stuff is good! Addictive and zingy and just perfect.

My roommate and I are obsessed with the buffalo tempeh. We serve it over a bed of arugula and pour a little follow your heart ranch on top, soooo good!
Other faves are chickpea piccata and the goddess nicoise salad. The green goddess dressing is incredible and the combo of it with the chickpea "tuna" and olives is crazy.

My friend made the Arabian Lentil & Rice soup the other day and RAVED about it. Then I made it two days later. Every time I make it, I change a little something. This time I used the Chicken-style Better than Bouillon, extra lemon and garlic, and we threw in some harissa paste. SO good.
She said she's been really inspired to cook since I gave her the book. Her husband usually does most of the cooking, so he was skeptical at first. She's been more involved with the planning and prep, so he's starting to come around. They will still add some chicken or fish sometimes, but on the whole they're really enjoying it!

I made the Chipotle Chilli with sweet potatoes and Brussels sprouts today, so good! I can't believe I waited so long to cook with chipotles. Yum yum yum! Looking forward to leftovers tomorrow.

i made the upside down lentil shepherd's pie tonight and both me and my husband really liked it.
i did mix ketchup and A1 sauce in it though cause that's how i used to eat regular shepherd's pie. ;-)
my husband really liked it and kept asking me how hard it was to make. :-)

The Red Velvet Mole is stupendous. My omni guests ordered AFR then and there on the basis of it. We had it with beans etc in tortilla wraps.

I made the bf quinoa puttanesca last week and he loved it. He'd never had quinoa before and was wary of trying it, but it was a hit.

I don't recall the name, but I made the yummy maple glazed carrots last night. Really easy and so tasty. Normally my husband will not touch a cooked carrot - but between the two of us (and two carrots the baby ate) we nearly finished off the 1 lb bag of baby carrots last night!

Think I am getting it back tomorrow or Friday. She has fallen in love with it and wants to get a copy. She can't make anything during the week because of the lack of cooking facilities where she is staying during the week but she said she just wants to make everything in it.
