Good to know about the eggplant mole - I made the black bean one and really wasn't a fan so hadn't intended on trying the eggplant one, but I might give it a whirl now.

Last night we had the lotsa veggie lentils stew - pretty standard lentil soup recipe - definitely easy and good though. I also made the ginger mashed sweet potatoes - I do think those are soooo delicious!

Bought this cookbook for my mom for her birthday - I've made her a few of the recipes and she loved them! This is the best book for introducing omnis to easy, accessible vegan food.

the only comment my husband made is he thought it needed more of a kick so he put some sriacha on it.
in the recipe it says if you want it spicier to add a 1/2 tsp red pepper flakes when you add the garlic. i added red pepper flakes but not nearly a 1/2 tsp because my tolerance for spicy is WAY LOWER than his.

Made the chickpea picatta and caulipots last night for the first time in forever. Caper-hating partner hoovered that stuff up. He was like "why don't you make this more?" Ummm because you said you hated it because of the capers and caulipots. Well, I guess it has been long enough...and he loves both of them now. Good. Because I love those too! (he used to me 'meh' on caulipots)

My co-worker (who is a foodie, and a little weirded out by my veganess) said that my leftovers smelled AMAZING. I explained with it was, and he was impressed.

I made (a variation on) the lentil soup last night for lunches this week. It's a little different than my go-to lentil soup, which is more like a stew that's heavy on crushed tomatoes, and uses different spices. It smelled really good when cooking it! Parnter said it was yum when he tried it. I'll have it for lunch tomorrow. That's a really good soup for using up what is in the pantry/veggie crisper. I didnt have to buy anything for it at the store.

made the butternut coconut rice again last night (not sure that is the precise name of it)
always a favorite in my house. i use the whole damn can of coconut milk though.

my husband was like "i could keep eating and eating it but im trying to restrain myself"

Has anyone made the sanctuary dressing with fresh silken tofu instead of the vacuum packed kind? Do you find that blanching the tofu beforehand is necessary?

I've only used Mori-Nu, but I've never blanched it, mostly out of laziness. The beanyness isn't noticeable, especially if you add extra garlic, like I do.

Made Cajun Beanballs and Spaghetti tonight. Delicious!
I'd especially try it if you like a little spice in your food, I'm not usually a fan of spicy but really enjoyed this.

I just tried it last night and didn't like it at all! Don't know why I expected to like it though since I'm not really an eggplant fan. It wasn't terrible, but I won't make it again.

I'm rather indifferent to eggplants too, but I really like them in the eggplant and chickpea curry. They get so velvety!

made the pot-pie stew again which I love and had the sweet potato biscuits for the first time. I used some leftover ginger mashed sweet potatoes (sans ginger) so I left out the maple syrup but they were still pretty sweet - definitely tasty and moist though. Bonus was the baby loved them!

I made the orange beetroot sesame salad (probably not named like that) but with couscous instead of wild rice. So good! The orange and sesame with the beetroot was lovely.

That sanctuary dressing is kind of amazing. I made it earlier, and when I tasted it it did not seem right. It tasted way too much of the vinegar and not enough of everything else, and certainly not how I remember ranch dressing. But the recipe said it needed to chill for a few hours, so I put it in the fridge figuring I could tinker with it later. I just tasted it, and holy crepe, it tastes just like ranch. It's so good! Now I can't wait for it to be dinner time. Too bad it's only 3:30 right now.

i made the roasted eggplant & spinach muffaletta (with olive tapenade, etc..) and even made my own focaccia bread to serve the sandwich on. omni hubby really enjoyed it. big servings, we had it for dinner twice. sadly, i had a minor allergic reaction and i think i may be allergic to eggplant so i won't be making the sandwich again :( but for those of y'all who haven't tried it, i highly recommend it, it was a bit of work and the kitchen got trashed making it, but it was well worth it, allergic reaction and all ;)
